Catching Up

My word, I really did not realise how many blogs I read, I've been trying to catch up after my couple of days off and its taking me ages!

I really really did not want to get out of bed this morning, I just felt exhausted. I'm so looking forward to Sunday, I think I might even have breakfast in bed, although knowing my luck I'll be wide awake at 5am!

I did eventually get up and have a mug of warm water with lemon to try and give me a kick start. I then did my usual Davina DVD workout. I was suprised how well I managed it and actually felt much more energised after doing it.

Breakfast was a bowl of porridge made with jumbo oats, quinoa flakes and water mixed with a scoop of vanilla whey, some blueberries and a spoonful of melty almond butter.


De-lish!

When I got into work I had about 50 emails to sort out and a ton of messages to go through, typical of when you have a couple of days off!

Lunch was a bowl of Lentil and Spinach Soup (the last one from my frozen stash, I must make more!) and a couple of chopped kiwis with red grapes.


Mid afternoon I snacked on an apple and two babybel lights


Dinner was inspired by a recipe I had seen in a magazine (can't remember which one now!)

Brocolli and Beetroot Salad (makes 2 portions)

1 head of brocolli
2 cooked beetroot sliced
2 cups of cooked quinoa (I boil mine in veg stock for extra flavour)
Half a red onion chopped
1 carrot, grated
Spinach leaves
1/4 cucumber chopped
Juice of half a lemon

Cut the brocolli into florets and steam until slightly tender but still crunchy (or just have raw if that floats your boat). Run under cold water to stop them cooking and put to one side. Chop and grate all of the veggies and mix with the quinoa and the brocolli. Top with a squeeze of lemon juice.


This salad is so good! All of the ingredients go so well together and the quinoa is extra tasty when cooked with the veg stock, yum!

Desert was some chia seed pudding made with hazelnut and almond rice milk and agave on top of chopped strawberries.


This tasted wonderful, strawberries are so good at the moment!

Drinks - water, green tea, decaf coffee, decaf tea

My poor broken laptop got collected for repair today, I have my fingers crossed that it will get sorted out without any problems, although now that I have my little Net Book I may not really need to use it that much!

Well it seems that the sun may finally be arriving here in the UK. I'm so excited at the prospect of a sunny weekend, although at the moment I don't have much planned apart from the usual chores around the flat. Whats your favourite thing to do when the sun comes out? I love just sitting in my Mam and Dad's back garden and reading magazines while sunbathing and of course enjoying a good barbeque! At least its Friday tomorrow so not long till the weekend now, hope your all having a great week :-)
